Dinner Tonight: April 28, 2016 Salmon with Pesto

Salmon with Pesto


Going around the table, each person names a "rose" (high point), "thorn" (low point) and "bud" (thing to look forward to) from the day.


What is your most vivid dream?

If your family doesn’t like salmon, feel free to substitute halibut, haddock or Arctic char.


Serves 4

  • 2 lbs. salmon filets
  • Pesto, to taste


  1. Slice salmon into serving portions. Rub with olive oil. Season with salt and pepper.
  2. Sauté in skillet or grill—about 2 – 3 minutes per side over medium-high heat. Top with a bit of pesto before serving.
