Quick and Easy Pumpkin Butter

Quick and easy pumpkin butter

This simple recipe for pumpkin butter makes a perfect dip for fruit (like the apples pictured here), but it’s also great spread on toast, pancakes or waffles. Store it in an airtight container in the refrigerator, and it will keep for up to 2 weeks — if you don’t eat it all up before then!

Ingredients

1 15-oz. can pumpkin puree (This is different from “pumpkin pie filling,” so be careful!)
3/4 cup apple cider
1/4 cup maple syrup
2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ground cloves (optional – if your family finds the clove too strong, leave it out)

Instructions

1. Combine all the ingredients in a medium saucepan.
2. Cook over medium heat, stirring occasionally with a whisk, until the pumpkin butter is thick and smooth (about 10 minutes).
3. Allow the pumpkin butter to cool before using it for dipping or spreading.
