Multicolored Slaw Salad
The bright colors in this slaw are so tempting, it’s hard to resist taking a bite! The sweet and tangy dressing is yogurt-based, which keeps the salad fresh and healthy. Golden beets make an unusual but mild and sweet addition, a great way to introduce a new vegetable into your family’s diets!
Ingredients
2 cups peeled, grated golden beet (about 1 large)
2 cups grated or finely shredded red cabbage
1 cup grated carrot (about 1 medium)
1/2 cup finely chopped fresh parsley
2 green onions, finely sliced (whites and light green parts only)
1/2 cup plain yogurt
2 tablespoons honey
2 tablespoons apple cider vinegar
1/2 tsp. salt
1/4 tsp. pepper
1 tablespoon poppy seeds
Instructions
1. Combine the yogurt, honey, apple cider vinegar, salt, and pepper in a large bowl. Whisk until thoroughly mixed.
2. Stir in the poppy seeds.
3. Add the grated beet, carrot, red cabbage, and chopped parsley and green onion.
4. Toss the salad well to coat the vegetables thoroughly with the dressing.
