Dilled Cucumber Salad
This simple salad really brings out the flavor of the cucumber and dill. Make it ahead and refrigerate until you’re ready to serve!
- 1 English cucumber (one of those long cucumbers, usually found wrapped in plastic), peeled and sliced
- 1 Tbsp. coarsely chopped fresh dill
- 4 Tbsp. rice vinegar or cider vinegar
- Salt and pepper, to taste
- Combine all ingredients in a bowl; cover and refrigerate until ready to serve.
- Taste and add salt and pepper to taste.
