Dilled Cucumber Salad

Dilled cucumber salad

This simple salad really brings out the flavor of the cucumber and dill. Make it ahead and refrigerate until you’re ready to serve!

Ingredients

Serves 4-6

  • 1 English cucumber (one of those long cucumbers, usually found wrapped in plastic), peeled and sliced
  • 1 Tbsp. coarsely chopped fresh dill
  • 4 Tbsp. rice vinegar or cider vinegar
  • Salt and pepper, to taste

Instructions

  1. Combine all ingredients in a bowl; cover and refrigerate until ready to serve.
  2. Taste and add salt and pepper to taste.
