Plus, at $1 a pound, quinoa is a grain that’s both cheap and nutrient dense. Not only is quinoa a complete protein, but compared to other grains it’s higher in calcium, phosphorus, magnesium, potassium, iron, copper, manganese, and zinc. This recipe is also a great gluten-free alternative to regular mac and cheese, so eat up!
- In a medium saucepan, combine the quinoa, milk, salt, and pepper
- Bring to a boil
- Reduce heat to low, and allow the quinoa to simmer, covered, until cooked through and the liquid is absorbed (about 15 minutes)
- Stir in the cheese and butter until thoroughly melted and creamy
- Serve immediately
