Caprese Sandwich
Some days, turning the oven or stovetop on is just too much–especially on hot summer days. Enter delicious, nutritious options like this Caprese Sandwich! Sandwiches are truly build-your-own meals, as it is extremely easy to leave out one ingredient or add another.
As is, this sandwich includes protein, dairy, vegetable and a grain! That’s a super healthy combo.

Ingredients
- Good French bread
- Pesto, either homemade or from a jar
- Ripe tomato, sliced
- Fresh mozzarella, sliced
- Fresh basil, stems removed
- Proscuitto or good sliced ham
Vegetarian Ingredients
- Good French bread
- Pesto, either homemade or from a jar
- Ripe tomato, sliced
- Fresh mozzarella, sliced
- Fresh basil, stems removed
- Black or Kalamata olives
Instructions
- Cut the bread into four or five inch lengths, then slice each piece horizontally.
- Spread about a tablespoon of pesto on one side of the bread.
- Layer as follows: tomato, mozzarella, a whole leaf or two of basil and proscuitto.
- Top with the other half of the bread, and serve.
Vegetarian Instructions
