Breakfast Burritos

This budget-friendly breakfast burritos recipe was developed by Julie Shoemaker and Ashlyn Housewright, both registered dietitians at Memorial Hospital in Carthage, Illinois. The recipe was part of a project that utilized only ingredients that could be purchased at a Dollar Store, and comes in at under $2 per serving.

Ingredients

Serves 6-8

  • 1 pound breakfast sausage
  • 12 eggs
  •  1 (15 oz) can black beans (rinsed and drained)
  • 1 (10 oz) can diced tomatoes with green chiles, such as Rotel (drained)
  • 1 cup shredded cheese
  • Tortilla shells for serving

Instructions

  1. Spray large skillet with cooking spray. Add the breakfast sausage to the skillet and break apart as it cooks. Cook for 6-8 minutes, or until the sausage is completely browned. Drain fat off of meat.
  2. Then, rinse and drain black beans and drain tomatoes with chiles. Add both to the sausage. Stir to combine and cook for 3-5 minutes. 
  3. Crack all of the eggs into a medium sized bowl and whisk until yolks and whites are completely combined.
  4. Pour the egg mixture into the skillet with the other ingredients and stir continuously until the eggs are completely cooked. 
  5. Once the eggs are cooked, add the shredded cheese, and stir until melted.
  6. Serve mixture with tortilla shells and toppings of choice.
