Ingredients
4 cups rolled oats (old-fashioned; quick oats won’t work in this recipe)
1 cup sliced almonds
1 cup sunflower or pumpkin seeds
1/3 cup canola oil
1/3 cup pure maple syrup
3 tablespoons honey
1 teaspoon cinnamon
1 teaspoon salt
1/2 teaspoon vanilla extract
1 cup raisins or dried cranberries
Instructions
Preheat oven to 350 degrees. Line a large rimmed baking sheet with parchment paper, or grease it well.
In a small saucepan, stir together the oil, maple syrup, honey, salt and cinnamon. Heat gently, stirring frequently, until the honey has melted and the whole mixture is thin and pourable (this should only take a minute or two). Remove from the heat and stir in the vanilla extract.
In a large bowl, combine the oats, nuts and seeds.
Pour the oil mixture over the oat mixture and stir well until everything is thoroughly coated.
Spread the granola onto the prepared baking pan and bake for 15 minutes. Stir, then return to the oven and bake for another 10 minutes. The granola should be lightly toasted and fragrant.
Let the granola cool for 10-15 minutes, then add the dried fruit and stir. The granola will become crispy as it cools.
