Berry and Chocolate “Ice Cream” Sandwiches
These little gems are so easy to assemble, older kids could handle the task all by themselves! Using freshly whipped cream makes for a light and fluffy filling and ensures that you can put the sandwiches together in under 10 minutes’ time. Then all you have to do is wait patiently for them to freeze!
Ingredients
1 cup heavy whipping cream
3 tablespoons confectioner’s sugar
3/4 cup raspberries or chopped strawberries (you can use fresh or frozen berries)
1 oz. bittersweet chocolate, finely chopped
1/2 tsp. vanilla extract
12 graham cracker sheets, broken in half
Instructions
1. Using an electric mixer on high speed, whip the cream and confectioner’s sugar together until soft peaks form.
2. Gently fold the berries, vanilla and chopped chocolate into the whipped cream.
3. Top 12 of the cracker halves with the whipped cream mixture (each should take about a heaped tablespoon). Gently top with the remaining cracker halves to make sandwiches.
4. Wrap each sandwich in foil or plastic wrap and freeze until the filling is firm (at least 30 minutes).
