Banana boats

This recipe is adapted from the forthcoming book, Home for Dinner, by Dr. Anne Fishel.

There is something thrilling about cooking over an open fire at the beach.  With a little forethought you can comb the beach for driftwood, and bring some sticks, newspaper and matches to get the whole thing started. Scoop out a shallow hole and form a ring of stones around it—this will make a good resting spot for the wood. Once the fire is underway, make these  “banana boats,” which you should prepare at home before you go.

Ingredients

  • 1 banana per person
  • 4 squares of chocolate
  • 3 marshmallows
  • Tin foil

Instructions

  1. Slice each banana down the middle (keeping the skin on) and place alternating pieces of chocolate and marshmallows in the cavity.
  2. Wrap the stuffed banana tightly in aluminum foil.
  3. Toss the boats in the embers for about 5-10 minutes, and a bit of heaven will ensue: a hot, gooey confection that must be eaten with a spoon.
