Make up 3 silly new traditions for our family. What would they be?

Ever heard of Oscar Tschirky? Apparently he was the the maître d’hôtel of the Waldorf Astoria  in New York City back in 1893, and the guy who created the first Waldorf salad. This wonderful version of his famous dish comes to us from our friend Jennifer Haugen, RD, LD, out in Minnesota. The most important ingredient here, we think, is the apples. Says Jen, “I prefer SweeTango, a Minnesota grown apple that’ s a cross between a Honey Crisp and a Zestar.”  But if you’re not from Minnesota, simply choose your favorite! This dish is a build your own because each person can decide if it’s served with crackers, as a  sandwich or on a bed of lettuce.

 

 

Ingredients

Serves 4

  • 1/3 cup low-fat mayonnaise
  • 1/3 cup low-fat plain yogurt
  • 1/4 tsp. salt
  • 3 cups diced cooked chicken from rotisserie chicken
  • 1 medium red apple, diced
  • 1 cup halved red grapes
  • 1 cup sliced celery
  • 1/2 cup chopped walnuts

Instructions

1. Whisk mayonnaise, yogurt and salt in a large bowl.
2. Add chicken, apple, grapes, celery and walnuts.Stir to coat well.
3. Serve.
