Breakfast Burritos
This budget-friendly breakfast burritos recipe was developed by Julie Shoemaker and Ashlyn Housewright, both registered dietitians at Memorial Hospital in Carthage, Illinois. The recipe was part of a project that utilized only ingredients that could be purchased at a Dollar Store, and comes in at under $2 per serving.
Ingredients
Serves 6-8
- 1 pound breakfast sausage
- 12 eggs
- 1 (15 oz) can black beans (rinsed and drained)
- 1 (10 oz) can diced tomatoes with green chiles, such as Rotel (drained)
- 1 cup shredded cheese
- Tortilla shells for serving
Instructions
- Spray large skillet with cooking spray. Add the breakfast sausage to the skillet and break apart as it cooks. Cook for 6-8 minutes, or until the sausage is completely browned. Drain fat off of meat.
- Then, rinse and drain black beans and drain tomatoes with chiles. Add both to the sausage. Stir to combine and cook for 3-5 minutes.
- Crack all of the eggs into a medium sized bowl and whisk until yolks and whites are completely combined.
- Pour the egg mixture into the skillet with the other ingredients and stir continuously until the eggs are completely cooked.
- Once the eggs are cooked, add the shredded cheese, and stir until melted.
- Serve mixture with tortilla shells and toppings of choice.
