Dinner Tonight: Budget Friendly Shopping List: Week of February 13, 2023

Here is your weekly meal plan and shopping list!

This week, you’ll want to make a double recipe of the Simple Tomato Sauce so you have enough for Tuesday night’s spaghetti and Thursday’s meatball subs. (We’ve already accounted for the extra ingredients on this shopping list.) You can make both in advance and store in the refrigerator, so you’re not rushing to make dinner on busy nights.

To go with your spaghetti and meatballs, use some of either the broccoli, cauliflower, or both. The chicken recipe that uses cauliflower only calls for half a head, so you will have extra. Also, when you buy your sub rolls, make note of how many you’ll need for meatball subs and how many are in the package. If there are extras, you can use those for the bread portion of the Broccoli Cheese Strata rather than having to purchase another loaf of bread for that meal.

Lastly, when you make the Sheet Pan Chicken Legs with Vegetables, the recipe calls for a “pinch of fresh thyme.” Rather than waste money and food buying a package of fresh thyme you may not use, go ahead and substitute dried thyme or any other dried herbs and spices you have on hand.

The shopping list is built from the recipes, so depending on the size of your family, you may need more or less of some ingredients. Remember to check the serving sizes before you shop so you can adjust your list to work for your family!

1 small container (4 oz) sour cream
1 dozen eggs
Parmesan cheese (optional)
1 package shredded mozzarella cheese
1 package shredded cheddar or swiss cheese
