Dinner Tonight: Budget Friendly Shopping List: Week of April 25, 2022

Here is your weekly meal plan and shopping list!

This week, you’ll be making a crispy taquito recipe that calls for ½ cup of cooked chicken. We’ve added some extra chicken breast to the shopping list in addition to what you’ll need for Thursday’s Apple Chicken Stir Fry; bake or poach the extra chicken before chopping to make the taquitos. You’ll also need shredded cheese for the taquitos, and we’ve included enough on the list that you can use an additional half-cup for Monday night’s pasta recipe as well.

For Friday’s half-veggie burgers, you should plan to top them as you would ordinarily enjoy a burger. We have included extra tomatoes on the shopping list in anticipation of the idea that you may want sliced tomato on your burgers, but you can omit that as you prefer. You may want to add sliced cheese for topping, and don’t forget to check your pantry for ketchup, mustard or whatever else you like on your burgers!

Please note that the recipes provided may serve different numbers of people. The shopping list is built from the recipes, so depending on the size of your family, you may need more or less of some ingredients. Remember to check the serving sizes before you shop so you can adjust your list to work for your family!

1 1/2 lbs. tomatoes
1 head garlic
1 package salad greens
2 onions
1 bunch celery
3-4 medium potatoes (you need 2 cups when chopped)
6 carrots
4 apples
1 small bunch scallions (green onions)
2 green bell peppers

Grocery Items/Dry Goods

1 can (15 oz) chickpeas
2 cans (15 oz each) lentils or beans of your choice
1 lb. whole wheat pasta
1 bag brown rice
16 oz. pico de gallo
12 corn tortillas
1 package burger buns (8 buns)

Frozen Foods

1 package Chinese pea pods (snow peas)
1 bag corn

Meat/Seafood

1 1/2 lbs. boneless, skinless chicken breasts
1 lb. cod filets
1 lb. ground beef

Dairy

1 package (8 oz) shredded Cheddar or Monterey Jack cheese
1 pint milk
