Dinner Tonight: Budget Friendly Shopping List: Week of March 12, 2018

Here is your weekly meal plan and shopping list!

This week, you’ll be buying plenty of vegetables. The Baked Vegetable Quesadilla recipe suggests 3 cups of assorted vegetables, so we’ve added an extra green pepper, extra broccoli and additional tomatoes to the shopping list for that purpose. However, we’ve omitted the herbs that get stirred into the sour cream for the quesadillas, as they’re not totally necessary and will add cost to your shopping list.

You’ll notice that the ground beef stroganoff recipe calls for broth and sherry. Since you’re already buying a quart of chicken stock and only using 3 cups for the jambalaya, save the last cup of broth to use in the stroganoff recipe on Thursday night. The sherry is optional in the stroganoff recipe, so don’t worry about using it. There are substitutions listed in the recipe itself that you may have on hand, or you can leave it out entirely and you’ll still have a yummy dinner.

Please note that the recipes provided may serve different numbers of people. The shopping list is built from the recipes, so depending on the size of your family, you may need more or less of some ingredients. Remember to check the serving sizes before you shop so you can adjust your list to work for your family!

1 small green chile pepper

1 bunch scallions
1.5 lbs. Broccoli
1 lemon
8 oz. mushrooms

Grocery Items/Dry Goods

1 bag long-grain rice
1 quart chicken broth
1 bag wide egg noodles
6 tortillas
1 loaf bread
1 can (8 oz) tomato sauce

Frozen Foods

1 can (6 oz) pineapple juice concentrate
1 large bag mixed vegetables

Meat/Seafood

2.5 lbs. Boneless, skinless chicken breasts
3 lbs. ground beef

Dairy

1 package shredded mozzarella cheese (you need 1.5 cups)
1 container (8 oz) sour cream
½ dozen eggs
