Family Picnic #6: Grilled Chicken Sandwiches and a Walking Dessert

This is the sixth installment of our Family Picnics series. We’re adding new ideas for weekly family picnics packed with food, fun and conversation throughout the summer of 2020. Our hope is that families will find new ways to connect despite the ongoing challenges of social distancing. Rituals are important to family life now more than ever — why not make family picnics a new ritual to look forward to?

This Week’s Family Picnic Menu

This week, enjoy grilled chicken sandwiches from our book Eat, Laugh, Talk: The Family Dinner Playbook! An unusual twist on potato salad makes a great side dish. You’ll finish with a cool treat that can be eaten at home, or taken on the go for a Walking Dessert experience!

The marinade recipe for these grilled chicken sandwiches also makes a great salad dressing, so make a double batch!

This salad uses roasted sweet potatoes and green beans for a punch of flavor and color.

Kids can make this simple dessert with just a little supervision. Make the sandwiches early in the day, or up to 3 days ahead, and freeze so they’re ready to go when you are.

Fun

Sometimes the most fun can be had just enjoying each other’s company. Stretch your legs and take dessert on the road while you walk around the neighborhood. Talk, play some walk-friendly games, or just get some exercise together.

Conversation

Throughout the pandemic, it’s been tough to talk about the future because so much is still unknown. But these conversation starters could be a positive way to start thinking ahead and remind each other that there’s something beyond the here and now.
