Ingredients
Makes 1 ice cream sandwich
- 1 challah roll (such as these, from Challah Back Girls); or you can use challah bread, sliced about 3/4 inch thick
- 2 scoops cookies and cream ice cream
- 1/2 cup – 1 cup rainbow sprinkles
Instructions
- Slice the challah roll in half.
- Place in the oven on Hi-broil for 2 minutes – watch carefully to be sure it toasts, but doesn’t burn! If you’d like to make these at an outdoor barbecue, you can carefully grill your buns until they’re crisp.
- While the buns are toasting, put the rainbow sprinkles on a plate.
- Scoop the ice cream onto one of the challah bun halves, open face, and then place the other side of the bun on top.
- Turn the sandwich quickly on its side and roll the sandwich all the way around in the sprinkles, so that the sprinkles stick on to the outside perimeter of the whole sandwich.
- Take a big bite and enjoy!
