Here is a fun, meatless meal that is easy to make. It’s do-it-yourself taco night! This recipe allows each family member to assemble their own taco from a variety of options.
First, gently and slowly sauté two onions and two green (or red) peppers in a little bit of oil. Cook until very soft. The onions in my photo are brown because I cooked then in the same pan as some sausage I was making for a different meal, so they picked up the flavors and smell of the sausage. Yum!
Next, have your kitchen helpers chop cheese, avocado, lettuce, tomato, mango, scallions—whatever you can find in your refrigerator. Make a cup or two of rice. Grate a raw carrot and zucchini, and rinse some canned black beans.
Set out all the veggies, heat up some corn tortillas, and invite your family to make their own tortillas. You have just made a meatless meal that is fun, tasty and healthy! If you’d like, you can also include sour cream, limes, hot sauce and salsa.
