Mango Sorbet with Toasted Ginger Cookies

Mango sorbet toasted ginger

These are super easy to make. It can be a lot of fun to cut the cookies into shapes with cookie cutters. If you like, use another spice instead of the ginger, and use vegetable oil for a more neutral flavor.

Ingredients

Makes 2 to 4 dozen cookies, depending on size.

  • 1 pint mango sorbet
  • 1/4 cup sugar
  • 1 tsp. ground ginger
  • 1 package (24) wonton wrappers
  • Sesame oil

Instructions

  1. Preheat oven to 350 degrees. Lightly spray 2 cookie sheets with non-stick spray or line them with parchment paper.
  2. Stir sugar and ginger together.
  3. Use cookie cutters or a knife to cut wonton wrappers into shapes if desired. Arrange on baking sheets.
  4. Brush each wonton with sesame oil and sprinkle with ginger sugar.
  5. Bake for 5 minutes, or until browned. Cool before eating.
