Four-Ingredient Coconut Fudge Popsicles

Dairy-free coconut fudge popsicles

This recipe from team member Bri DeRosa is a simple, wholesome twist on chocolate ice cream pops.  In just a few minutes, you can easily whip up a rich and chocolatey frozen dessert that the whole family will love.  The recipe is so simple, we recommend letting the kids get into the kitchen to help!

Ingredients

1 can (about 13.5 oz) coconut milk
1 cup semi-sweet chocolate mini-chips, or finely chopped semi-sweet chocolate
2 tablespoons coconut oil
2 tablespoons honey

Instructions

1. In a small saucepan over medium-low heat, combine the chocolate chips, coconut oil, and honey. Stir frequently until the chocolate is melted and the mixture is smooth, watching carefully to make sure it doesn’t burn.
2. Pour the chocolate mixture into a medium-sized bowl or pitcher. (A pitcher makes it easy to pour into popsicle molds later.)
3. Add the coconut milk and stir until all the ingredients are fully combined.
4. Pour into six standard popsicle molds and freeze for at least 3 hours.
